We made these yesterday and they are really, really good.......... make some...... today. :) Apples are in season so that should give you even more of a reason to try these out. These muffins are very moist and so tasty and the topping is amazing. M mostly ate the topping and the apple chunks out of the muffins. They should freeze well too, but you probably won't have any leftover. But just in case. ;)
Ingredients:
2 cups whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
2 eggs (I actually used egg beaters)
1 1/4 teaspoons vanilla
1 teaspoon cinnamon
1/2 teaspoon nutmeg
3 cups peeled, chopped apples (about a cup was shredded)
(Muffin topping)
1/3 cup packed brown sugar
1 tablespoon whole wheat flour
1/4-1/2 cup oats
1/4-1/2 cup of almonds (i used slivered, untoasted unsalted)
1/8 teaspoon ground cinnamon
1 tablespoon butter
Preheat oven to 375 degrees. Greese 12 cup muffin pan.
Mix together flour, soda, powder, and salt. Set aside.
Beat butter and sugars. Add eggs and mix until smooth. Mix in vanilla, cinnamon, and nutmeg. Stir in apples gently. Add in flour mixture gradually. Don't over beat/stir (lumps are ok).
Spoon into muffin pan.
For the topping, mix the sugar, flour, almongs, and cinnamon. Cut in butter. Sprinkle over top of uncooked muffins.
Bake for 2o minutes. Let cool for 5 minutes.
