Bite size pieces of various veggies (I used carrots, celery, and zucchini, probably a cup or so)
Olive oil
1-2 cans of diced tomatoes
1 can of your favorite beans (I used garbonzos)
2 cups of chicken stock/broth/bouillon
pasta shells (a handful)
a couple cloves of garlic, minced
italian seasonings, salt, pepper to taste
Sautee veggies in olive oil for several minutes.
Add garlic and cook for another minute or two.
Add tomatoes and seasonings and simmer for 10 minutes to an hour.
Add beans and pasta, and cook for however long the pasta needs.
Quick, easy, and yummy.
